I don't know why I blog about recipes as I am not a very good cook, I'm no foodie, and I doubt anyone really cares. But I guess my blog is as close to a journal as I can keep these days, so if I want to look back and see what I was cooking when Z was a baby, here goes. ..
Halloween Stew

You need:
onion
sweet potato
green bell pepper
sausage
granny smith apple
large can diced tomatoes (24 oz?)
beer (optional)
Dice onion, pepper, apple, and sausage into smallish chunks. Peel and dice sweet potato.
You can honestly put it all in a pot at once and cook it that way, but I prefer to add each item in order of ingredients list with a smidge of olive oil and cook for a minute or two before adding the next thing. Once you add the tomatoes, add between 1/2 to 1 can of water and the beer. I like to use a good cooking beer--Shiner Bock does a nice job--but it's optional. Let simmer for a while or at least until the sweet potato is cooked through. You can also add spices to taste or use flavored diced tomatoes (I vaguely remember using the basil/oregano tomatoes once and that was fine, too).
The original recipe suggested serving in a scooped out bread bowl, but yeah right like I have time for that. This is good with cornbread (I heart the Marie Callendar's mix but my stupid Kroger doesn't carry it and I am too lazy to drive to Target for it. It's too good anyway and I end up eating most of the cornbread in one sitting so it's probably a good thing.)

There's a MONTHLY meme called "Recipe Round-up" and I've decided to join in. Once a month is totally doable, and this time was "Freezer Recipes". ALL the ones I saw looked delicious! And easy. I believe I'm hosting in January and the theme I'm choosing is "Crowd Pleasers"--that should cover everything from appetizers to dessert!
BTW, this was an INTERESTING combination of ingredients...apples? In stew? VERY cool!
