Friday

I have nothing to blog about today that does not involve prune juice.

But at least I will make my two-post-a-week goal.

Coming soon: How do you keep your household "green"? I'm always looking for enviro-friendly tips.

Oh, and I did not post my easy recipe of the week, so here it goes:

Open freezer.
Remove Weight Watchers frozen meal.
Follow directions.
Enjoy meal.
Wash plastic dish and recycle it!
Buen provecho!

I'm not very green - I keep thinking I'm going to start doing things, but then I never seem to get around to it! I am still looking for reusable grocery bags.

Prune juice? I hope that was for Zane.

Green? I'm taking little steps - I've stopped buying syrup in plastic bottles and am spending the extra money for pure syrup in glass - figure Glass is better for recycling than plastic (because plastic only gets degraded, whereas glass becomes glass again)

Recipe from Weight Watchers

Orange Couscous with Chicken

Makes 6 servings

3/4 cup orange juice
2 teaspoons low-sodium chicken bouillon granules
1 teaspoon chicken bouillon granules
3/4 cup couscous
3 cups shredded cooked skinless chicken breast
one 11-ounce can mandarin orange sections, drained
1/2 cup chopped parsley
(I just use 2 to 3 chicken buoillon cubes - and no parsley, it's just decoration, right?)

In a large dutch oven or pot, combine the orange juice, both kinds of buoillon and water; bring to a boil. Remove from the heat; stir in the couscous. Let stand, covered, until the liquid is absorbed, about 5 minutes. Fluff with a fork, then stir in the chicken, all but 1/4 cup of the orange sections, and the parsley. Cook over low heat, stirring frequently, until heated through, about 5 minutes. Serve, garnished with the remaining orange sections.

Per serving - 251 calories, 2 g Total Fat, 1 g sat fat, 48 mg cholesterol, 239 mg sodium, 34 g Total carbs, 0 g dietary fiber, 23 g protein, 34 mg calcium

I noticed I forgot 2 important things!!!! It's a 1/2 cup of water. And more imprtantly it's 5 points per serving! Happy Eating!
